Peach Thyme Bellini

If there’s one thing we love here at Brunchouver, it’s a proper Brunch bevvie. The rules are simple; it needs to have some fruit juice, and it needs to have sparkling wine. Bonus points if it’s served in a champagne flute!

This Bellini has it all; sweet peaches, a touch of savory thyme, and, of course, the all-important bubbles.

Peach Thyme Bellini

Ingredients:

  • 1 part peach purée
  • 3 parts Ruffino Prosecco
  • One drop of bitters
  • Sprig of thyme

Instructions:

  1. Place peach purée into the bottom of a chilled flute.
  2. Fill glass with prosecco, add bitters, and stir.
  3. Garnish with thyme.
