This Bellini has it all; sweet peaches, a touch of savory thyme, and, of course, the all-important bubbles.
Peach Thyme Bellini
- 1 part peach purée
- 3 parts Ruffino Prosecco
- One drop of bitters
- Sprig of thyme
- Place peach purée into the bottom of a chilled flute.
- Fill glass with prosecco, add bitters, and stir.
- Garnish with thyme.
